chicken afritada

i hate touching raw chicken. so inadvertently, the kids end up eating more red meat. i needed to add another chicken dish to our menu...

ingredients:
1/2 onion
1/2 head of garlic
3 chicken breast cut in pieces
4 small potatoes
1 green bell pepper
1 red bell pepper
handful of frozen peas
1 cup tomato sauce
2 cups chicken broth
2 tbsp patis
3 bay leaves
salt & pepper

directions:

mince garlic. chop onion. cut chicken in about 2 inch pieces. slice bell peppers in thick strips. cut potato in large cubes.

add a little oil to pot and fry chicken on high heat just to brown the outside slightly. add garlic and onion and continue to saute. add salt & pepper and cubed potatoes. add tomato sauce and chicken broth. leave heat on high until liquid boils, then turn down heat to simmer. add peas. stir occasionally until potatoes are overcooked. the potato starch will naturally make the sauce thicker. add 2 tbsn patis or to taste. add bell peppers, mix in well and turn off heat. i like the bell peppers crunchy.

ming you should get the frozen trader joes breast tenderloins. i will never buy raw non frozen meat again!

lol lol I was going to post that I made this tonight and used the tjoes frozen tenderloins and it came out perfect. and was going to tell u to start using that so u dont have to touch raw meat but I see I told you that tip last year. lol.
