oreo cupcakes

oh man, these were the BEST dairy-free cupcakes ever! i didn't feel like i had to justify the taste by letting everyone know it was dairy-free. these would pass for the real thing, if not better. really! i made these for my niece's birthday who is not allergic to anything.

  • 1 cup flour
  • 1/3 cup cocoa powder
  • 3/4 tspn baking soda
  • 1/2 tspn baking powder
  • 1/4 tspn salt
  • 1 cup soy milk
  • 2 tspn apple cider vinegar
  • 3/4 cup sugar
  • 1/3 cup canola oil
  • 1-2 tspn vanilla extract
  • 14 oreo cookies
  • Pillsbury creamy supreme vanilla frosting

preheat oven to 350 degrees. in a large bowl, mix soy milk and vinegar together. put aside and let it sit. in another large bowl, mix the flour, cocoa powder, baking soda, baking powder and salt. add the sugar, oil, and vanilla extract to the soy milk & vinegar mixture. mix the wet and dry ingredients together. coarsely chop 8 oreo cookies and add to the batter. fill liners and bake for 20 minutes. makes 12 cupcakes.

let cupcakes cool all the way before icing. microwave about 1/2 the container of pillsbury icing for about 15 seconds or until its a nice consistency. slice 6 oreos in half. frost cupcakes and stick a 1/2 oreo on top of each.
