lugaw/arroz caldo

a lazy day at home today and i didn't want to leave to go grocery store. all i had for meat was one piece of chicken breast in the freezer...

  • garlic
  • onion
  • 1 chicken breast cut in pieces
  • 2 cups rice
  • knorr chicken cube or chicken broth
  • salt
  • pepper
  • patis (fish sauce)
  • green onion
  • chicharon
  • water

1. mince garlic and onion. mince ginger super small (frozen ginger is easier to mince). cut chicken in small pieces.

2. heat pot with a bit of oil. saute garlic & onion. add chicken pieces with bone and skin. add salt and pepper. brown. 

3. once chicken is slightly brown, add knorr cube (if you're not using chicken broth), patis and rice/bigas. keep saute-ing for at least 10 minutes. add ginger.

4. add water & chicken broth (if you didn't already use the knorr cube). just enough liquids to cover rice.

5. cover pot.

6. mix often adding water gradually until its the consistency you like.

two cups of rice makes a HUGE pot of lugaw. remember, the soup will thicken as it cools so make it more liquidy. serve with green onion, crushed chicharon and patis & lemon/calamansi sauce. i ran out of garlic today, but if you have extra... mince the garlic and fry with salt until brown. sprinkle on top of soup.
